  • Flour
  • Sugar
  • Bananas
  • Oil
  • Eggs
  • Chocolate Chips
  • Baking powder
  • Baking soda
  • Salt
  • Vanilla Extract

How to make moist banana chocolate chip muffins

  1. First preheat the oven to 390ºF / 200ºC.
  2. Next Line 12 standard muffin liners in a muffin pan.
  3. Add 1 Tablespoon of flour to chocolate chips and coat them. This will help the chips get all over the batter and they will not sink to the bottom of the liners when baked.
  4. In a bowl mix the dry ingredients: flour, baking powder, baking soda and salt.
  5. In another bowl whisk eggs with sugar and then add mashed bananas.
  6. Now add oil followed by Vanilla extract and mix to combine.
  7. It’s time to add wet ingredients to dry ingredients and combine. Only mix until just combined and don it over mix the batter. It will be lumpy and not completely mixed and that exactly when you should do the next step.
  8. Add flour coated chocolate chips and fold in gently to distribute them evenly throughout the batter.
  9. Scoop in the batter into muffins cups. Fill up 2/3 of the cases.
  10. Bake for 12-15 minutes, until the top is cracked, golden brown. Use a toothpick to check the center. Do not overbake.
  11. Let cool on a wire rack for five minutes and then transfer to a cooling rack.

    The basic ingredients for Pão de Queijo include:

    • Tapioca Flour: Provides the unique texture and makes them Gluten-free.
    • Cheese: I have used a mixture of four cheese Parmesan, Cheddar Mozzarella and Colby.
    • Milk: Adds moisture and richness and it’s best to use whole milk for perfect texture and taste.
    • Butter or Oil: Adds fat for flavor and texture. I like to use Olive oil.
    • Eggs: Help to bind the ingredients and add to the chewy texture.
    • Salt: Enhances the overall flavor but must be careful in using salt as cheese are salty as well.

    Brazilian Cheese Bread Recipe Variation:

    While the classic recipe is delicious and remains popular, variations can include using different types of cheese for diversified taste to the snack as well as adding herbs and chili flakes. I was thinking of experimenting with incorporating sweet ingredients for a unique twist.

    Steps to Prepare Delicious Brazilian Cheese Bread Pão de Queijo:

    1. Pre heat oven to 200 C.
    2. In a blender jug put Milk, Olive oil, Egg and Salt and give it a few seconds mix.
    3. Add in Tapioca starch and give a blend to incorporate everything.
    4. Next add in cheese mix and give few pulses to incorporate all ingredients together to form the batter.
    5. Spray some oil in small muffin tray.
    6. Pour batter all the way to the top.
    7. Bake them at pre heated oven for 15-20 minutes or until they are golden on the outside with high dome.
    8. Take them out and let rest for just few minutes and then enjoy.

    Storing Leftover Brazilian Cheese Breads

    Brazilian cheese puffs are best enjoyed freshly baked as they have most texture and flavors but if you have some leftovers store them properly to enjoy later.

    At Room Temperature:

    • Duration: 1-2 days.
    • Method: Place the baked Pão de Queijo in an airtight container or a plastic bag to keep them from drying out.

    In the Refrigerator:

    • Duration: Up to 1 week.
    • Method: Store the baked cheese bread in an airtight container. Reheat in an oven or toaster oven to restore their chewy texture before serving.

    This easy to make double chocolate muffins are made with good quality cocoa powder and then loaded with chocolate chips. Although there’s a lot of chocolate in the muffins they are light and airy. This recipe makes around 17 muffins and during winter you may even keep they outside fridge in an air tight container for few days and they will stay fresh.

    Top Tips:

    Always use quality ingredients for best result.

    Sieve dry ingredients before adding to wet. That ensures there are no lumps on the final batter.

    Ensure ingredients are at room temperature for perfect baking.

    Oven temperature varies so keep an eye towards the end.

    Avoid overmixing. This ruins everything. After flour goes in, do not overmix the batter as you will end up having tough muffins.

    HOW TO MAKE DOUBLE CHOCOLATE MUFFINS FROM SCRATCH:

    Ingredients

    Plain Flour – 240 g

    Granulated Sugar – 200 g

    Cocoa Powder – 60 g

    Greek Yogurt – 175 g

    Eggs – 2

    Oil – 125 ml

    Milk – 125 ml

    Baking Powder – 1 1/2 tsp

    Baking Soda – 1 tsp

    Vanilla Extract – 2 tsp

    Salt – 1/8 tsp

    Chocolate Chips – 150 g

    How to make double chocolate muffins:

    Pre heat your oven to 180 C and line muffin trays with liners and set aside.

    In a bowl sieve in all purpose flour, cocoa powder, baking powder, baking soda, salt and give a quick stir to combine and then set aside. 

    On another bowl crack eggs and beat with sugar. Then add yogurt, milk, oil, vanilla and mix to combine.

    Next add wet to the dry and gently mix in everything making sure to scrape the bottom. Do not overmix the batter.

    Now add some flour mix to chocolate chips and coat them. This will help chocolates to get evenly baked throughout all muffins.

    Finally put coated chocolate chips in the batter and fold in gently until mixed in.

    Pour in batter in muffin liners. I like to use an ice cream scoop for that. Bake for 15-18 minutes.

    Peanut butter Banana chocolate chip muffins

    HOW TO MAKE PEANUT BUTTER BANANA MUFFINS:

    Ingredients

    Flour – 200 g

    Sugar – 1/2 Cup

    Baking Powder – 1 tsp

    Baking Soda – 1/2 tsp

    Salt – 1/4 tsp

    Bananas – 2

    Large Eggs – 2

    Oil – 1/2 Cup

    Peanut Butter – 1/4 Cup

    Peanut Butter Chocolate Chips – 100 g

    Chocolate Chips – 50 g

    Vanilla Extract – 1 tsp

    Instructions

    First preheat the oven to 390ºF / 200ºC.

    Next Line 12 standard muffin liners in a muffin pan.

    Add 1 Tablespoon of flour to chocolate chips and coat them. This will help the chips get all over the batter and they will not sink to the bottom of the liners when baked.

    In a bowl mix the dry ingredients: flour, baking powder, baking soda and salt.

    In another bowl whisk eggs with sugar and then add mashed bananas.

    Now add oil followed by peanut butter and Vanilla extract and mix to combine.

    It’s time to add wet ingredients to dry ingredients and combine. Only mix until just combined and don it over mix the batter. It will be lumpy and not completely mixed and that exactly when you should do the next step.

    Add flour coated chocolate chips and fold in gently to distribute them evenly throughout the batter.

    Scoop in the batter into muffins cups. Fill up 2/3 of the cases.

    Bake for 22-25 minutes, until the top is cracked, golden brown. Use a toothpick to check the center. Do not overbake.

    Let cool on a wire rack for five minutes and then transfer to a cooling rack.

    This is a fool proof recipe for making Raspberry muffins in which there is a balance of everything to make them puff up as they should and have a dome on top, a tasty crispy brown sugar crust on top and you can use either frozen or fresh berries. If you follow the measurements right and the steps correctly, you should have no fail perfect raspberry muffins every single time.

    Ingredients for making Moist raspberry muffins:

    Flour: Regular plain flour is needed for the recipe. Gluten free flour does not give the same result.

    Raspberries: You can use either fresh or frozen Raspberries for this recipe.

    Baking Powder: Baking powder is the rising agent for the recipe. It not only makes the batter airy but also achieve getting nice café style domes on top.

    Eggs: Make sure eggs are at room temperature.

    Salt: Just a little salt helps bring out the flavours and help balance the tartness from fruits.

    Vanilla Extract: Try to use quality Vanilla extract for better flavours.

    Sugar: Both white granulated white sugar and brown sugar is used in the recipe. Brown sugar helps the muffins get rich brown colour.

    Milk: I have used full fat cows milk for the recipe.

    Butter: Melted warm butter helps the batter achieve fluffiness.

    Oil: Oil helps the muffins stay soft and moist.

    Lemon Zest: Flavours from Lemon zest goes very well with Raspberries. Make sure not to zest the white part as they tend to be bitter.

    Variations & substitutions:

    • Sugar: you may use all white or brown sugar. Using a combination is better but if you don’t have both handy then either will do. 
    • Citrus: besides lemon, raspberries pair very well with orange.
    • Chocolate chips: Using some white chocolate chips will be a great variation for these muffins making them bit sweeter which will compliment the light tartness from raspberries.
    • Oil: You may use all oil and skip using melted butter. The options could be sunflower, canola or coconut oil. A light olive oil also works if you like the flavour of it for baking muffins. 
    • Cake Flour: If you do not have cake flour to hand then use all purpose flour. It will still give you great tasting soft muffins. 

    How to make raspberry muffins from scratch

    Ingredients for making raspberry muffins:

    Flour – 2 Cups

    Baking Powder – 1 Tbsp

    Salt – 1/4 tsp

    Large Eggs – 2

    Granulated white sugar – 1/2 Cup

    Brown sugar – 1/2 Cup

    Vanilla Extract – 2 tsp

    Milk – 3/4 Cup

    Oil – 1/4 Cup

    Melted Butter – 4 Tbsp

    Zest from 1 Lemon

    Raspberries – 1 & 1/2 Cups

    For crust

    Raspberries- 1/2 Cup

    Brown sugar – 3 Tbsp

    Instructions for making raspberry muffins at home:

    First preheat the oven to 350ºF / 180ºC.

    Next Line 12 standard muffin liners in a muffin pan. The yield can vary depending on the size of the berries.

    In a bowl mix the dry ingredients: flour, baking powder, and salt.

    In another bowl whisk eggs first and then add milk, oil, vanilla to it and mix. Add lukewarm melted butter and mix. Finally add Lemon zest to it and combine.

    Now Add wet ingredients to dry ingredients and combine. Only mix until just combined and don it over mix the batter. It will be lumpy and not completely mixed and that exactly when you should do the next step.

    Add Raspberries and fold in gently to distribute raspberries evenly throughout the batter.

    Scoop in the batter into muffins cups. Fill up 2/3 of the cases.

    Mash 1/2 cup raspberries and put a teaspoon on top of each muffin. 

    Sprinkle a tea spoon of brown sugar on top.

    Bake for 25 minutes, until the top is cracked, golden brown. Use a toothpick to check the centre. Do not overbake.

    Let cool on a wire rack for five minutes and then transfer to a cooling rack. 

    Enjoy these soft moist Raspberry muffins plain, or with a light drizzle of maple syrup or honey.

    For Muffins

    • 2 Cups Flour
    • 1 Tbsp Baking Powder
    • 1/4 tsp Salt

    • 2 tsp Vanilla Extract
    • 1/2 Cup White Granulated Sugar
    • 1/2 Cup Brown Sugar
    • 3/4 Cup Milk
    • 1/4 Cup Oil
    • 4 Tbsp Melted Butter
    • 1 Lemon Zest
    • 1 & 1/2 Cups Raspberries

    For Crust

    • 1/2 Cup Raspberries
    • 3 Tbsp Brown Sugar

    Instructions

    • Preheat the oven to 350ºF / 180ºC.
    • Line 12 standard muffin liners in a muffin pan.

    • Combine wet ingredients to dry ingredients and mix.
    • Gently fold in Raspberries into the batter.
    • Scoop in the batter into muffins cups. Fill up 2/3 of the cases.
    • For Crust Mash 1/2 cup raspberries and put a teaspoon on top of each muffin.
    • Sprinkle a tea spoon of brown sugar on top.
    • Bake for 25 minutes, until the top is cracked, golden brown.
    • Let cool on a wire rack for five minutes and then transfer to a cooling rack. 

    Top tips:

    Always check the muffins 3-4 minutes before bake some time. Every oven is different and instead of using oven temperature it could bake earlier. It’s very wise to check it few minion advance to be on the safe side. An over baked muffin not only taste dry but also will look unappealingly darker in shade. 

    Fold in Raspberries before flour mixture is all mixed in with wet ingredients. When you still see some pockets of fry flour it’s time to fold in Raspberries. If you do it later, there is a great chance of over mixing your gorgeous batter. 

    Why use two kinds of sugar:

    Oil will help the muffins stay soft and fluffy and butter will give it richness and will help retain its shape better. If you do not have both kids of sugar to hand, you can go for just white granulated sugar.

    About The Ingredients for making Pumpkin Muffins:

    Flour: Regular plain flour is needed for the recipe. Unfortunately gluten free flour does not give the same result.

    Pumpkin Puree: I have used 100% pure Pumpkin puree for the recipe. Canned puree works great as long as they are 100% pure.

    Sugar: Both white and brown sugar is used in the recipe for balancing everything.

    Baking Soda: This will help the batter to rise and also to create a dome on the top.

    Pumpkin Spice: Pumpkin spice is a seasonal spice mix and hence not always available on supermarket shelves. Moreover, they are only available at big supermarket. That is why I have given the measurements on how you can make this spice blend yourself at home. Please scroll below for that recipe.

    Vanilla Extract: Vanilla extract will enhance the flavour of the baked muffins. Always try to use quality Vanilla as it makes great difference.

    Salt: Adding a little salt will help balance all the spices and flavours in the recipe.

    Oil: I have used plain oil for the recipe. I would not recommend using a strong flavoured oil as it can be overpowering for the Pumpkin spiced muffins.

    Cream cheese: Cream cheese swirls are used on the top to make it extra delicious. Make sure they are at room temperature.

    How to Make Pumpkin Spice At Home:

    If you don’t have Pumpkin Spice to hand you can use the measurements given below to make your own Pumpkin spice.

    Ground Cinnamon – 4 tsp

    Ground Ginger – 2 tsp

    Ground Cloves – 1 tsp

    Ground Nutmeg – 1/2 tsp

    Ground Allspice (Optional) – 1/2 tsp

    How to make Moist Pumpkin Muffins with cream cheese from scratch

    Ingredients for making pumpkin muffins with cream cheese:

    Flour – 100 g

    Pumpkin Purée – 1 Cup

    White Granulated Sugar – 1/2 Cup

    Brown Sugar – 1/4 Cup

    Baking Soda – 1/2 tsp

    Pumpkin Spice – 1 & 1/2 tsp

    Vanilla Extract – 2 tsp

    Salt – 1/4 tsp

    Egg – 1

    Oil – 1/4 Cup

    For Cream cheese swirl

    Cream Cheese – 1/2 Cup

    White Granulated Sugar – 2 Tbsp

    Vanilla – 1 tsp

    Egg Yolk – 1 small

    Instructions for making pumpkin muffins with cream cheese:

    First pre-heat your oven to 400 F (200 C). Next line muffin tray with some parchments papers. This recipe yields 9 muffins.

    Now put Flour, Pumpkin spice, Baking soda and Salt in a bowl and combine.

    After that put Pumpkin purée, White sugar, Brown sugar, Egg, Vanilla, oil in another bowl and whisk to combine.

    And now mix dry and wet mixtures together and combine to create a batter.

    In a separate bowl whisk cream cheese and then add Egg yolk, sugar and vanilla and whisk to make a paste.

    Scoop pumpkin batter into muffin holes. Fill up up-to 2/3. And then put around 1 tablespoon of cream cheese mixture on top. Finally, swirl cream cheese mixture using a toothpick.

    Now let’s bake them in preheated oven for 18 to 20 minutes. 

    Let the baked muffins cool down for five minutes and then transfer them into a cooling rack.
