In this blog I will share with you a secret method for ensuring Blueberries are distributed and baked all over the loaf making it perfect in every bite.

The recipe calls for fresh ingredients and a tangy sweet drizzle of lemon syrup water. They are moist with one secret ingredient which makes it stand out. Top Tips For Making The Best Lemon Blueberry Loaf

Use Parchment Paper:  Line the bottom of the pan with a layer of the parchment paper hanging outside for easy after bake lifting. This will ensure that your lemon bread will not fall apart when you take it out of the baking pan.

Use Two Bowl Method: Combine dry ingredients in one bowl. Combine wet ingredients in a separate bowl. Only then, combine the two together.

Toss Those Berries: This tip is a life saver. Blueberries can all sink to the bottom of the pan and so before adding them to the batter coat them with couple of tablespoons of flour and they will stay nicely distributed throughout the batter even after baking.

Do Not Over Mix: Over mixing is the enemy of light and fluffy baking. It will allow gluten to develop more than needed and your loaf will be tough and possibly rubbery. So for soft and fluffy texture do not overmix the batter.

Cool The Loaf Before Glazing: Let the loaf cool down completely and only then drizzle the top lemon glaze. Otherwise your glaze will be too runny.

HOW TO MAKE Lemon Blueberry Loaf From Scratch:

Ingredients

Blueberries – 1 & 1/2 Cup

Plain Flour – 1 & 1/2 Cup

Granulated Sugar – 1 Cup

Baking Powder – 2 tsp

Salt – 1/2 tsp

Large Eggs – 3

Yogurt – 1 Cup

Oil – 1 Cup

Vanilla – 1 tsp

Lemon Zest – From 1 Lemon

Lemon Drizzle Ingredients:

Juice from Lemon – 1

Icing Sugar – 1 Cup

Vanilla Extract – 1 tsp

Instructions

Pre Heat Oven to 350 F.

Now add 2 Tablespoons of plain flour to Blueberries, coat and set aside. 

Next in a Bowl Put plain flour, baking powder and salt together, combine and set aside.

Now in a separate bowl crack Eggs, put Sugar to it and beat for half a minute.

Pour in Greek yogurt, Oil, Vanilla extract and add zest from one lemon and beat to combine.

Now add dry to the wet and combine just until mixed properly.

Then add Blueberries and mix in.

Finally pour batter in a butter greased loaf pan with a hanging parchment paper on the bottom.

And now just bake in pre heated oven for 60-70 minutes. 

After baking let the loaf cool down completely.

In the meantime take lemon juice and powdered sugar in a pan and heat up to melt sugar. Add Vanilla extract, mix and take the pan off heat.

Poke baked loaf with skewers to create holes for lemon drizzle to enter and then drizzle lemon glaze on the loaf.
