Ingredients
  

Pumpkin Muffin Base

  • 100 g Flour
  • 1 Cup Pumpkin Puree
  • 1/2 Cup White Granulated Sugar
  • 1/4 Cup Brown Sugar
  • 1/2 tsp Baking Soda
  • 1&1/2 tsp Pumpkin Spice
  • 2 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 1 Egg
  • 1/4 Cup Oil

Cream Cheese Swirl

  • 1/2 Cup Cream Cheese
  • 2 Tbsp White Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1 Egg Yolk

Instructions
 

  • Pre-heat your oven to 400 F (200 C).
  • Line muffin tray with parchments papers. This recipe yields 9 muffins.
  • Put Flour, Pumpkin spice, Baking soda and Salt in a bowl and combine.
  • Put Pumpkin purée, White sugar, Brown sugar, Egg, Vanilla, oil in another bowl and whisk to combine.
  • Mix dry and wet mixtures together and combine to create a batter.
  • In a separate bowl whisk cream cheese and then add Egg yolk, sugar and vanilla and whisk to make a paste.
  • Pour pumpkin batter into muffin holes. Fill up up-to 2/3.
  • Put around 1 tablespoon of cream cheese mixture on top. Swirl cream cheese mixture using a toothpick.
  • Bake in preheated oven for 18 to 20 minutes. 
  • Let cool down for five minutes and then transfer them into a cooling rack.
