These chocolate cookies are loaded with chocolate on the base, and both inside and out. The cookies are so full of chocolate yet the right balance and if made perfectly, the chocolate inside will stay hidden until they are broken. These Chocolate lava cookies are best served fresh to get the lava effect when broken into two.
Chocolates are my all time favourite and I love baking with them. There are simple chocolate cookies, chocolate filled cookies, chocolate chip cookies and so many varieties. These cookies take chocolate chip cookies to the next level. When served fresh, the gooey chocolate inside will come out when broken into two and kids love them.

Ingredients for Chocolate Lava Cookies
Butter: Butter required for this recipe is unsalted. Make sure you grab the right one from the supermarket. For this recipe you need your unsalted butter in melted form. I popped mine in the microwave for 1 minute in 30 seconds interval.
Sugar: For making these cookies you need two varieties of brown sugar. The first one is golden sugar which gives nice aroma and sweetness to the cookies. You will also nee Dark brown sugar for it’s darker shade for the cookies.
Egg: Just one egg is required for one batch of cookies. You need a large egg and it must be at room temperature.
Cake Flour: Cake flour has less protein than regular flour which results in giving you softer and fluffier cookies which works great for this recipe as there will be chocolate chips at the centre.
Cocoa Powder: Cocoa powder gives extra chocolatey flavour to the cookies.
Baking Soda: Baking soda helps lift the cookies and retain the shape nicely.
Chocolate chips: Two varieties of chocolate chips are required for making these cookies. Both will be dark. The first variety will go inside and you can use anything in between 50% – 70% cocoa. It’s better to use bigger chips for the inside filling. The second chocolate chip will go on top and using a dark chocolate chip will ensure they do not melt completely.

Top Tips for the Best Cookies:
Always make sure ingredients are at room temperature.
Try to use quality butter, chocolate and cocoa.
Do not overbeat egg.
Make sure chocolate chips are in the centre of the dough and closed properly.
HOW TO MAKE Chocolate Lava Cookies:
Ingredients
50 g Unsalted Butter
35 g Golden Brown Sugar
20 g Dark Brown Sugar
1 Large Egg
130 g Cake Flour
15 g Cocoa Powder
1 g Baking Soda
Chocolate Chips
Instructions
Put melted Butter, Golden brown sugar and Dark brown sugar in a bowl and whisk to combine.
Add 1 large room temperature egg and whisk to combine.
Sieve in Cake flour, Cocoa and Baking soda and mix until dough forms.
Form cookie ball using wither a measuring Table spoon or a kitchen scale. I like to take 27-28 g for each dough ball.
Make a dent in the centre of the dough ball and put some big chocolate chips inside and then close carefully. Make a round shape and press to flatten them. Put in baking tray.
Add chocolate chips on top.
Bake at 175 C pre-heated oven for 15 minutes.
