Prawns are my all time favourite. Do you know prawns are not fish; they are insects!! Don’t know if all the other insects are this tasty 😋. Prawns are such a great ingredient to use for cooking and specially for a quick snacks. They cook quickly and taste delicious. Prawn toasts or shrimp toasts are such a popular item in Chinese restaurants and take. In the UK, almost every Chinese or Thai restaurant or take away places offer these appetisers in their menu. Although it’s easily available in the menu, there is nothing like making your own at home. Specially if you are making for your kids you know exactly what is going in and what oil you are using. Most restaurants will reuse their deep frying oil which is so unhealthy. Where as at home you are always trying to give your family the best of the best.

Prawn Toast

Prawn toast is a classic Chinese appetiser. It’s a classic Dim sum dish which is small portions of different dishes or snacks. This crunchy springy appetiser is a favourite to kids and adults and is gone in a blink of an eye. Before I started making them at home, it was a must in my take away order. Many times we got disappointed with either too oily prawn toasts or thin dry ones. Restaurant kitchens are busy and often they prepare the dishes ahead of time and re-heat before serving them. As for homemade ones you surely will put your love to it and probably will make them fresh.

Prawn toasts make great appetisers for serving guests. These triangles looks so nice when served with little bit of dipping sauce. Although it doesn’t take much time making these appetisers, you can always make them in advance to serve to your guests. I always look for recipes that can be made ahead of time so that I can enjoy time with my guests rather than being in the kitchen even after my guests have arrived. Now these prawn toasts can be made in advance and you can just leave them in the refrigerator but wrapped or in an air tight container. Right before you want to serve, just fry them fresh. Bread filled with prawn paste and coated with sesame seeds and fried till golden

Ingredients
  

  • 4-5 Slices White Bread
  • 250 g Prawns
  • 1/2 tsp Salt
  • 1/8 tsp Black pepper powder
  • 1 Egg White
  • 1 tsp Sesame Oil
  • 1 Tbsp Corn Starch
  • 1/4 Cup Sesame Seeds
  • Oil For frying

Instructions
 

  • Cut sides off Bread slices.
  • Clean, devein Shrimps and take off excess water
  • Put Shrimp, Salt, Black pepper powder, Egg white, Sesame oil, Corn starch in a food processor and run for around 30 seconds to make a paste.
  • Spread the paste into one side of the bread. Try to evenly distribute.
  • Coat in Sesame seeds.
  • Heat oil in a pan and in medium heat fry them. Fry top side first for 1 minute and then the other side for another minute.
  • Take out in kitchen towel lined plate and then cut into halves or quarters.

Top tips for making & serving them

  1. If possible fry them fresh.
  2. If you are serving them to a medium to big crowd and this is one of many snacks/appetisers, make 4 portions from 1 slice of bread.
  3. Use big prawns, they taste much better and juicy.
  4. Take off excess water from raw Prawns before making the mince. Excess water will make your spread runny and your toasts might break.
  5. When you apply prawn spread make sure you press and apply. That’s way you can ensure it sticks to the bread and will not fall off while frying.
  6. Chil them in the fridge for 10-15 minutes and then fry.
  7. Always fry seed side down first and then the other side.
  8. Oil temperature is crucial and you must keep it to medium low to medium. Prawn cooks very quickly and keeping the temperature low will ensure nice ones.
