It’s super easy to make delicious Tandoori chicken in the air fryer. If you love Indian food you must have come across with Tandoori chicken or Chicken Tandoori. It’s very popular and requires a ‘Tandoor’ which is a special kidn of oven to make this falvourful delicious chicken dish. But if you have an Air fryer at home then give this recipe a try and you will be amazed at the result.

To make this delicious Air fryer chicken tnadoori, you’ll need the following ingredients:

  • Chicken – Any Chicken piece can be used but drumsticks and thighs are the most flavourful parts.
  • Greek Yogurt – You can use any thick yogurt.
  • Salt – Adjust salt according to your taste.
  • Paprika – Gives smokey color and flavor to the dish.
  • Cayenne – Gives a kick to the grilled meat.
  • Turmeric Powder – Gives the traditional flavour to this Tandoori chicken.
  • Garam Masala Powder – Is one of the essential spices for this chicken dish.
  • Cumin Powder – Skip if you do not have it to hand but flavour might compromise.
  • Ginger Garlic Paste – You can either paste or powder. These help eliminate bad odor from poultry.
  • Tomato Paste – Adds depth of flavour to the dish.
  • Lemon Juice – This will help the chicken become juicy and tender.
  • Oil – You can use any mild oil of your choice.
  • Food Colouring – Traditionally used for a great Tandoori chicken look. Use either Red or Orange colour.

How To Make Tandoori Chicken At Home In Air Fryer

Prepare the Chicken Drumsticks:

  • Clean and pat dry chicken pieces and then make some butterfly cuts on them to help marinade spread all over.

Prepare the Marinade:

Make a Tandoori chicken marinade by mixing Greek yogurt, Salt, Paprika powder, Cayenne, Turmeric powder, Garam masala powder, Cumin powder, Ginger garlic paste, Tomato puree and Lemon juice. Mix everything together to make a thick paste.

Marinate the Chicken:

  • Add the delicious marinade on chicken pieces, ensuring each piece is well coated with the marinade. Cover the bowl and refrigerate for at least 1 hour, preferably overnight for the best flavor.

Oil Coating:

  • Add oil to chicken and then give a final mix before placing them in the air fryer basket.

Cook the Chicken In Air Fryer:

  • Place the marinated chicken pieces in the air fryer basket in a single layer. Do not overcrowd; cook in batches if necessary.
  • Air fry the chicken at 390°F (200°C) for 20-25 minutes, turning halfway through the cooking time to ensure even cooking. The chicken should be cooked through with a slight char on the outside.

Check for Doneness:

  • Use a meat thermometer to check the internal temperature of the chicken. It should reach 165°F (74°C).

Garnish and Serve:

  • Once cooked, remove the chicken from the air fryer and let it rest for a few minutes.
  • Garnish with fresh cilantro leaves and serve with lemon wedges on the side.

However, many times there are leftover that could be not enough for everyone’s dinner the next evening. You can store this cooked chicken in an air tight container in the fridge for up t 2-3 days. You can also freeze them for later use in other recipes.

1. Storage Methods:

  1. Refrigeration: Store leftover chicken in the fridge for 2-3 days. Make sure it’s covered properly.
  2. Freezing: If you want to keep your tandoori chicken for a longer period, consider freezing it. Put them in a zip lock bag. Label and date the packages before storing them in the freezer for up to a month.

2. Creative Ways to Using Leftover tandoori Chicken:

Now that you know how to store your leftover chicken, let’s explore some exciting ways to incorporate it into your cooking:

  • Chicken Sandwich: Put chicken, mayonnaise and mustard in a food processor and run it for few seconds for a delicious chicken sandwich spread. Toast a slice of crusty bread and spread the paste on top.
  • Sauté vegetables: Add pulled chicken on vegetables while you sauté them to make it more filling.
  • Saute with onion and herbs for a side dish: Pull chicken pieces and sauté with light olive oil on a pan with onion, garlic and some extra seasoning.

Eggplant is one of those love or hate ingredients. All my life I avoided most recipes that call for aubergine or eggplant. The only eggplant recipe I loved was Beguni, a very Asian snack. While I was pregnant with my son I craved for eggplants and ended up trying different cuisines made with it. And the rest is joyful and delicious. Baba Ganoush is an eggplant dip which is loaded with taste. I tried this dip not long time ago but immediately decided to look for the recipe. It’s super easy to make at home and I have been making it for years now.

Baba Ganoush is popular in many parts of the world. It’s mostly served as a dipping sauce with pita or maze. In Greece I had it in a different way. It was served with my oven roasted lamb as a healthy alternative for potato mash. It was awesome.

Making Baba Ghanoush is super simple but there’s just one challenge. Eggplant can be bitter so you need to follow some steps to avoid getting bitter Baba Ghanoush. In this blog I will share my secret trick to make it tasty and not bitter. In my recipe I have shared all those simple tricks to make your Baba Ghanoush super delicious. I also add little bit of geek yogurt to make it restaurant like and extra creamy.

Is Baba Ganoush a healthy option?

Well it’s plant based so vegan and it’s gluten-free too. It’s low in carb and a great keto recipe too. If you compare it to other dips such as Mayonnaise, Cheesy dip or other type of fatty sauce and dips then Baba ganoush is definitely a healthier option. It has Eggplant as key ingredient which is a vegetable and there’s good amount of Tahini sauce which is a Sesame puree. Even most brands of ketchup are full of so much sugar.

What does it taste like?

It has a smoky taste from both roasted aubergine and garlic with kick from lemon juice. Creaminess and nutty texture from Tahini and finally the dash of Greek yogurt gives it a balance from all the strong flavours. It’s a great tasting dip and goes very well with many items.

Storage and Lasting:

Baba Ganoush is one of those items that you can make ahead of time and have it all ready to be served with your favourite food. This is one great thing I love about this spread that you can keep it for days. You can store this delicious dip covered in the refrigerator for up to 3-4 days depending on weather.

Ingredients

  • 1 Eggplant
  • 3 Garlic Cloves
  • 1/4 Cup Tahini sauce
  • 1 Tbsp Lemon juice
  • 1/2 tsp Salt
  • 1 Tbsp Greek yogur
  • Parsley for garnish
  • Smoked paprika for garnish

Instructions

  • Cut eggplant in half and make some holes with a fork on both the skin side. The. Apply 1/2 tsp salt on the top side, rub and leave for  at least 15 minutes. This will help release some moisture from the eggplant and will take away the bitterness. Do not skip this step unless you might end up getting bitter Baba ganoush.
  • Rinse with water and use a kitchen towel to take out excess water.
  • Apply olive oil on both sides of the eggplant and then put on baking tray with fleshy side down. 
  • Foil wrap garlic cloves with little olive oil. 
  • Pre heat oven to 200 c. Bake both eggplants and garlic for 30 minutes until flesh is soft.
  • Take out the flesh of eggplants and put in a food processor along with roasted garlic, lemon juice, tahini sauce, salt and Greek yogurt. Blend and done.
  • Drizzle some olive oil and garnish with some parsley and paprika.
  • Chil for few hours for the flavours to build up.

Notes

  1. Resting eggplants with some salt is very important because it will take out the bitterness from them.
  2. If you put too much tahini sauce then your Baba ganoush will turn runny.
  3. Most recipes call for raw garlic but I find roasted garlic gives a much more dense taste.
  4. Chilling or resting your Baba ganoush will intensify the flavours.

A chili sauce that has won the world by taste with just the right balance of sweetness!

Thai sweet chili sauce has such interesting taste; a chili sauce that’s mild and has just the right balance of sweetness to make it stand out in the crowd. This Asian chili sauce is so popular that you will see them in all major supermarkets. They made their way from Asian grocery stores to all major small and big supermarkets. It goes really well with different type of snacks. It’s a dip and it’s a sauce too. It’s such simple combination but a crown winner. If I have a party over at my place and I am serving snacks with two to three different dips, this is definitely on my list.

Thai sweet chili sauce recipe

I always try to make my own batch and over the years I have made at least hundreds of bottles of this Thai sweet chili sauce. Sometimes I like to take them to my friends and relatives as something homemade which doesn’t take long to prepare. The recipe I am sharing today is something I have worked on for years and works just right for me. You can easily get this sauce on shops but there is something great about making them by yourself. To start with there will be no preservatives and that’s my number one reason for making them at home. Another great thing with making your own Thai sweet chili sauce is that you can adjust everything in it. For example, if you not a great fan of garlic, you can add less of it. Or if you are watching your weight, you can tailor the sweetness. And you are in charge of the level of the hotness!!

Snacks that goes well with this sauce

Spring rolls are the best to be enjoyed with sweet chili sauce but it doesn’t limit this sauce with just this. You can enjoy it with fried dumpling, crackers, appetisers, tempura, crisps and many more. I like to dip my salted crisp in this sauce and get a great combination of hot, sweet and saltiness. Another way to add a variation is to spread it on your sandwich; trust me it makes a lot of difference. This dip goes very well with veggies as well. Now that I am sharing all these ideas, I am thinking of doing a video on that. What type of chilis are used

Two varieties of red chilis are used to make a proper balanced Thai sweet chili sauce. Birds eye chilis are a small variety of red chili. It’s small in size but fiery hot. This chili is used for it’s heat. Now, if you make chili sauce out of these birds eye chili no matter how much sugar you put it will be too hot. That is why Big red chilis are also used. They are mild and they give this sauce it’s texture and colour. In this recipe I have used the right combination of both for making Authentic Thai sweet chili sauce.

Ingredients

  • 4 Big red chili
  • 4 Bird's eye chili
  • 5 Garlic cloves
  • 100 g Granulated white sugar
  • 1 Tbsp Vinegar
  • 1 Tbsp Fish sauce
  • 1/2 tsp Salt
  • 5 g Potato starch
  • 150 ml Water

Instructions

  • Mince Chilis and Garlic cloves together.
  • Put Water in a pan and add Sugar, Vinegar, Fish sauce & Salt and bring to a boil.
  • At boiling point add Chili-Garlic mixture, stir and let cook for 5 minutes in low heat.
  • Dilute Potato starch in little water and add to the sauce.
  • Stir and remove from heat.
  • Let it cool down and store in sterilised jars.

Notes

1, Add more big re chilis for milder sauce and more Bird’s eye chilis for hotter sauce.
2. Potato starch gives clearer sauce compared to Corn flour. 
3. After adding starch, stir and immediately remove from heat. If left with heat, potato starch looses it’s ability to thicken. 
4. Always store in sterilised jars.

How to store

Always store in sterilised jars and make sure there is no moisture in it. This sauce stays good for weeks in the fridge.
