Breakfast Casserole With Egg Potato & Feta Cheese
A delicious healthy breakfast recipe that works great for kids lunchbox and snack for the whole family.
Italian Casserole Frittata Di Patate:
This recipe makes potato frittata, a popular Italian potato and egg bake with cheese. The recipe works amazing in both oven and pan. I usually cook my potatoes in the pan and then finish it up with eggs in the oven. It’s a delicious recipe for the whole family. You can experiment with your choice of filling keeping the base recipe same.
I am a mom of a very picky eater, and I am always busy with my recipes experiments, blog and cooking channel. Sometimes I need recipes that are quick to assemble but ensures they are healthy for my family. This is one of those recipes which ensures my kid and the whole family is getting lots of protein and good fat in their body.

Why I love making this Casserole?
Ideal Breakfast: This is an ideal breakfast for the whole family. You can make as little or as big depending on the size of your family and everyone’s breakfast is ready together.
Great for kids lunchbox: This casserole actually makes a healthy lunchbox item for kids. You can cut them into strips or squares; or you can even cut them into fun shapes so that kids have something interesting in their lunchbox.
Healthy Snack: These potato frittatas have a lot of protein in it. They have eggs and loaded with cheese which makes them healthy snack item for anyone in the family; specially kids
Versatile: The recipe is simple and you can use any topping of your choice. You can completely skip cheese and add other filling of your choice. Adding some deli meat will be yummy.
Ingredients for making Breakfast Casserole:
Egg: Any size of eggs will do the job. If eggs are too small you might need to adjust according to potato egg ratio.
Potato: I like to use the potatoes which gets nice crust on the outside. The ones which are great for frying will be the best option compared to the ones for mashing.
Cheese: Using cheese is a preference and you can use any cheese of your choice. However, it’s better not to substitute parmesan as it will give nice texture and flavor. I have used Feta cheese as topping but Cheddar, Leicester and many other varieties will work amazing too.
Salt: Regular salt is good enough but i like to give it some dense flavor so i like to use garlic salt.
Dried Herbs: Using dried herbs is not absolutely necessary but will definitely add up to give better flavor to the dish.
Oil: You can use other oils for this recipe such as Avocado or Rapeseed oil.
Mum Hack:
If your child is a picky eater, put their favorite filling inside along with eggs, potatoes and cheese. You can cut them into fun shapes for their lunchbox to surprise them!
HOW TO MAKE Frittata Di Patate:
Ingredients
Potatoes – 4 medium
Olive Oil – 2 Tbsp
Salt – 1 tsp
Eggs – 3
Salt – 1 tsp
Parmesan cheese – 5 Tbsp (40g)
Dried Herbs – 1 Tbsp
Feta Cheese – 50 g
Instructions
Peel potatoes and then cut them into small chunks.
Wash potatoes to get rid of extra starch and then add dry with kitchen towel.
Add 2 tablespoons of olive oil and half a teaspoon of salt to potatoes and mix.
Next add 1 tablespoon of olive oil in a pan and heat up. Add in potato chunks and fry them until they are halfway cooked and crispy on the outside. (Approximately 20 min).
Take out potatoes in a bowl and let them cool down for 5 to 8 minutes.
In the meantime, preheat your oven to 170°C.
In a bowl, crack, three eggs, and add Parmesan cheese, salt, and dried herbs (optional). Give a quick mix and it’s ready.
Prepare a baking tree by lining parchment paper.
Pour in egg and potato mix sugar on the baking pan and level it up.
Crumble some feta cheese, and Put them on top.
Add some dried herb of your choice.
Baking the oven for 15 minutes or until the top has a crispy golden crust.
Take out from the oven; let it cool down slight and then take out using the sides of the parchment paper.
Cut into medium or small size. Serve and enjoy!
