Ingredients
  

  • 4 Potatoes Medium
  • 2 Tbsp Olive Oil
  • 1 tsp Salt
  • 3 Eggs
  • 5 Tbsp Parmesan cheese
  • 1 tsp Dried Herbs
  • 50 g Feta Cheese

Method
 

  1. Peel potatoes and then cut them into small chunks.
  2. Wash potatoes to get rid of extra starch and then add dry with kitchen towel.
  3. Add 2 tablespoons of olive oil and half a teaspoon of salt to potatoes and mix.
  4. Add 1 tablespoon of olive oil in a pan and heat up. Add in potato chunks and fry them until they are halfway cooked and crispy on the outside. (Approximately 20 min).
  5. Take out potatoes in a bowl and let them cool down for 5 to 8 minutes.
  6. Preheat your oven to 170°C.
  7. In a bowl, crack, three eggs, and add Parmesan cheese, salt, and dried herbs  (optional). Give a quick mix and it’s ready.
  8. Prepare a baking tree by lining parchment paper. Pour in egg and potato mix sugar on the baking pan and level it up.
  9. Crumble some feta cheese, and Put them on top.
  10. Add some dried herb of your choice.
  11. Baking the oven for 15 minutes or until the top has a crispy golden crust.
  12. Take out from the oven; let it cool down slight and then take out using the sides of the parchment paper. 
  13. Cut into medium or small size. Serve and enjoy!
