Put Salt, Black pepper powder, Paprika, Garlic powder, Frankie’s red hot sauce, Mayonnaise and an egg on chicken and mix well. Marinade for 1/2 hour or longer if you prefer.
Make a flour coating mixture by adding Flour, Cornstarch, Salt, Black pepper powder, Red chili powder, Garlic powder, Ginger powder, Onion granules and Oregano and mix well.
Coat chicken pieces in flour mixture and shake off excess.
Dip them in cold water for few seconds and shake off excess water.
Recoat chicken pieces in flour mixture and shake off excess.
Deep fry them in hot oil.
Shake off excess oil and put on cooling rack with kitchen towel underneath.
