Mastering the Muffin Base

The key to a fantastic muffin lies in the batter. Here’s how to achieve a moist and fluffy texture:

  • The Ripeness of the Bananas: Don’t underestimate the power of ripe bananas! Overripe bananas are much sweeter and add incredible moisture to the muffins. Avoid green bananas, as they won’t provide the necessary sweetness and texture.
  • Mixing Methods: Don’t overmix your batter! Overmixing leads to tough muffins. Combine the wet and dry ingredients just until incorporated. A few lumps are perfectly fine.
  • Filling the Muffin Tins: Don’t underfill or overfill your muffin tins. Aim for about ¾ full to ensure even baking and prevent muffins from overflowing.

Choosing Your Chocolatey Adventure

When it comes to chocolate chips, you have endless options! Here are a few ideas to tantalize your taste buds:

  • The Classics: Semi-sweet chocolate chips are a timeless choice, offering a perfect balance of sweetness and chocolate flavor.
  • Dark Chocolate Delights: For a more intense chocolate experience, opt for dark chocolate chips. This is a great choice for those who prefer a less sweet muffin.

Mix it Up: Feel free to get creative! Combine semi-sweet and dark chocolate chips, or throw in some white chocolate chips for a touch of variety. You can even use chopped nuts or dried fruit for an extra textural element.

How to make moist banana chocolate chip muffins

  1. First preheat the oven to 390ºF / 200ºC.
  2. Next Line 12 standard muffin liners in a muffin pan.
  3. Add 1 Tablespoon of flour to chocolate chips and coat them. This will help the chips get all over the batter and they will not sink to the bottom of the liners when baked.
  4. In a bowl mix the dry ingredients: flour, baking powder, baking soda and salt.
  5. In another bowl whisk eggs with sugar and then add mashed bananas.
  6. Now add oil followed by Vanilla extract and mix to combine.
  7. It’s time to add wet ingredients to dry ingredients and combine. Only mix until just combined and don it over mix the batter. It will be lumpy and not completely mixed and that exactly when you should do the next step.
  8. Add flour coated chocolate chips and fold in gently to distribute them evenly throughout the batter.
  9. Scoop in the batter into muffins cups. Fill up 2/3 of the cases.
  10. Bake for 12-15 minutes, until the top is cracked, golden brown. Use a toothpick to check the center. Do not overbake.
  11. Let cool on a wire rack for five minutes and then transfer to a cooling rack.
