To make this delicious moist and soft chocolate chip filled Banana chocolate chip muffins you’ll need the following ingredients:
- Flour
- Sugar
- Bananas
- Oil
- Eggs
- Chocolate Chips
- Baking powder
- Baking soda
- Salt
- Vanilla Extract
How to make moist banana chocolate chip muffins
- First preheat the oven to 390ºF / 200ºC.
- Next Line 12 standard muffin liners in a muffin pan.
- Add 1 Tablespoon of flour to chocolate chips and coat them. This will help the chips get all over the batter and they will not sink to the bottom of the liners when baked.
- In a bowl mix the dry ingredients: flour, baking powder, baking soda and salt.
- In another bowl whisk eggs with sugar and then add mashed bananas.
- Now add oil followed by Vanilla extract and mix to combine.
- It’s time to add wet ingredients to dry ingredients and combine. Only mix until just combined and don it over mix the batter. It will be lumpy and not completely mixed and that exactly when you should do the next step.
- Add flour coated chocolate chips and fold in gently to distribute them evenly throughout the batter.
- Scoop in the batter into muffins cups. Fill up 2/3 of the cases.
- Bake for 12-15 minutes, until the top is cracked, golden brown. Use a toothpick to check the center. Do not overbake.
- Let cool on a wire rack for five minutes and then transfer to a cooling rack.
