These Keto diet friendly Spinach tortillas are very easy to make. You don’t need to roll them. It’s a 30 sec batter that you can do using your blender and just pour the liquid pan for perfect circle shapes. It’s amazing how only two ingredients are all you need for making tortillas.
These Spinach tortillas are Gluten free. There’s no use of any flour in the recipe. It’s just Spinach and Eggs. You may add flour if you prefer and both coconut flour or almond flour goes great with the batter. If you are watching your weigh the this recipe will make a great Breakfast or dinner. It’s low carb and you can add healthy nutritious filling of your choice. I like to use Avocado inside. You can even use chicken to make it even tasty.
This colourful tortilla helps kids eat some green
We all know how hard it is to feed your kids healthy. Greens are so important in their diet. This makes a diverse meal for kids. They actually might enjoy having a bright coloured tortilla. Moreover, you can play with the filling. Use other colourful healthy filling for the wrap and bam!!
Other reasons for having these Tortillas
Spinach is great source of Iron.
It helps lower cholesterol level.
Spinach improves hair growth.
Spinach is a skin healthy food. It makes your skin healthier.
How to best serve them?
There are many different interesting ways to serve these bright colourful tortillas. You can simply serve them with Avocado spread inside with your choice of Protein. Chicken and Mushroom goes great. You may also make Mexican Burritos with them. Some spicy sauce will work great with these tortillas. Making pinwheels is another great idea and specially for the little ones at home.
On the other hand, if you rather have it sweet then add some sweetness inside like Avocado and honey. Or maybe some other sweet filling inside.
Keto Spinach Tortilla
Ingredients
- 65 g Spinach
- 3 Eggs
- 1/4 tsp Salt
- 1/4 tsp Black Pepper Powder
- 1/4 tsp Garlic Powder
- 1/4 tsp Cumin Powder
- Oil for greasing the pan
Instructions
- Add all the ingredients into a blender jug and blend until smooth.
- Put a pan on medium heat and pour 1/3 of the mixture to make 1 Tortilla. Cook with lid on for 1-2 minutes.
- Remove lid, flip and cook without cover for another minute.
