Thai sweet chili sauce has such interesting taste; a chili sauce that’s mild and has just the right balance of sweetness to make it stand out in the crowd. This Asian chili sauce is so popular that you will see them in all major supermarkets. They made their way from Asian grocery stores to all major small and big supermarkets. It goes really well with different type of snacks. It’s a dip and it’s a sauce too. It’s such simple combination but a crown winner. If I have a party over at my place and I am serving snacks with two to three different dips, this is definitely on my list.

Thai sweet chili sauce recipe

I always try to make my own batch and over the years I have made at least hundreds of bottles of this Thai sweet chili sauce. Sometimes I like to take them to my friends and relatives as something homemade which doesn’t take long to prepare. The recipe I am sharing today is something I have worked on for years and works just right for me. You can easily get this sauce on shops but there is something great about making them by yourself. To start with there will be no preservatives and that’s my number one reason for making them at home. Another great thing with making your own Thai sweet chili sauce is that you can adjust everything in it. For example, if you not a great fan of garlic, you can add less of it. Or if you are watching your weight, you can tailor the sweetness. And you are in charge of the level of the hotness!!

Snacks that goes well with this sauce

Spring rolls are the best to be enjoyed with sweet chili sauce but it doesn’t limit this sauce with just this. You can enjoy it with fried dumpling, crackers, appetisers, tempura, crisps and many more. I like to dip my salted crisp in this sauce and get a great combination of hot, sweet and saltiness. Another way to add a variation is to spread it on your sandwich; trust me it makes a lot of difference. This dip goes very well with veggies as well. Now that I am sharing all these ideas, I am thinking of doing a video on that. What type of chilis are used

Two varieties of red chilis are used to make a proper balanced Thai sweet chili sauce. Birds eye chilis are a small variety of red chili. It’s small in size but fiery hot. This chili is used for it’s heat. Now, if you make chili sauce out of these birds eye chili no matter how much sugar you put it will be too hot. That is why Big red chilis are also used. They are mild and they give this sauce it’s texture and colour. In this recipe I have used the right combination of both for making Authentic Thai sweet chili sauce.

Authentic Thai chili sauce with just the right balance of sweetness

Ingredients
  

  • 4 Big red chili
  • 4 Bird's eye chili
  • 5 Garlic cloves
  • 100 g Granulated white sugar
  • 1 Tbsp Vinegar
  • 1 Tbsp Fish sauce
  • 1/2 tsp Salt
  • 5 g Potato starch
  • 150 ml Water

Instructions
 

  • Mince Chilis and Garlic cloves together.
  • Put Water in a pan and add Sugar, Vinegar, Fish sauce & Salt and bring to a boil.
  • At boiling point add Chili-Garlic mixture, stir and let cook for 5 minutes in low heat.
  • Dilute Potato starch in little water and add to the sauce.
  • Stir and remove from heat.
  • Let it cool down and store in sterilised jars.

Notes

1, Add more big re chilis for milder sauce and more Bird’s eye chilis for hotter sauce.
2. Potato starch gives clearer sauce compared to Corn flour. 
3. After adding starch, stir and immediately remove from heat. If left with heat, potato starch looses it’s ability to thicken. 
4. Always store in sterilised jars.

How to store

Always store in sterilised jars and make sure there is no moisture in it. This sauce stays good for weeks in the fridge.
